
Tired of the same breakfast? Make a “toast” with sweet potatoes. Top it with beans, pico de gallo and fried egg! You will forget you are having breakfast 😜
Ingredients
1 sweet potato, sliced
refried pinto beans, warmed
Pico de gallo or salsa to taste
1 egg, fried
fresh cilantro, for garnish

Directions
Cut or slice using a mandolin, sweet potato into thin slices, about ¼ inch thick.
Place the sweet potato slices in a lightly sprayed baking sheet. Bake until they are golden and tender.

Remove from oven and let cool enough to handle.
Heat refried beans. Spread the beans evenly across sweet potato toast, followed by the pico de gallo or salsa

Top with a fried egg. Garnish with cilantro and enjoy!
