
Ditch the take out menu and make this easy popular chicken in minutes! Serve over a bed of jasmine rice or eat as is. Deliciously good!
Ingredients
1 lb boneless, skinless chicken breast
salt, to taste
pepper, to taste
½ cup cornstarch
2 eggs, beaten
oil, to fry
2 cups plus 1 tablespoon oil
½ tablespoon garlic, minced
1 bell pepper, diced
1/4 yellow onion, chopped
3/4 cup cider vinegar
1 tablespoon soy sauce
1 tsp ginger, minced
¼ cup ketchup
½ cup sugar

Directions
Season chicken with salt and pepper. Coat with cornstarch, dip in beaten egg.
In a non stick skillet thats over medium high heat, use oil to fry chicken until golden, crispy and cooked through. Set aside. Dab with paper towel if greasy.

In a large pan, heat oil and fry garlic until fragrant. Add the bell pepper, onions and ginger, allow it to cook until peppers start getting tender.

In a bowl, mix the cider vinegar, soy sauce, ketchup and sugar. Set aside.

Add the fried chicken back to the skillet with vegetables. Pour in the sauce and allow it to simmer until the sauce has thicken.

Garnish with chopped scallions and sesame seeds. Serve with rice or quinoa and enjoy!
