Broccoli Cheddar Chicken Rollups

Baked to perfection and full of yummy broccoli and cheeses. Every bite will be deliciously great.

Ingredients

3 ½ cups broccoli, finely chopped, divided

2 cups shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

8 oz cream cheese, 1 package, softened

2-3 chicken breasts, thinly sliced and pounded

salt, to taste

pepper, to taste

1 cup of seasoned breadcrumbs

2 Tbs of olive oil

Juice of 1 lemon

Cooking spray

Directions

Preheat the oven to 325˚F . Line a baking sheet with aluminum foil and spray with cooking spray. Set aside.

In a food processor pulse your broccoli 10-15 times until is chopped finely. It will look like corse rice place in a bowl.

Microwave broccoli for 1 and half minute. Add the cheddar cheese, garlic powder, onion powder, and cream cheese. Mix thoroughly, and set aside until ready to use.

Mix your olive oil and lemon juice on a plate. Season with a pinch of salt and 1/4 tsp of black pepper. Add your breadcrumb to another plate or bowl and have ready.

On a cutting board, butterfly the chicken breasts with a knife. Cut through the chicken breast so you have 6 thinner chicken cutlets. Cover in plastic wrap, and tenderize by beating with a rolling pin or a heavy pan.

Remove the plastic wrap, and season with salt and pepper. Place a scoop of the broccoli cheddar mixture on top of a chicken cutlet, and spread until the chicken is covered.

Roll the chicken up starting from the tapered end. Use 2 toothpicks (if desired but you should be okay) to keep the chicken tightly rolled. Repeat with the rest of the chicken.

Place your chicken rolls in the lemon oil mixture and make sure is coated. Place in breadcrumbs and lightly roll it over to get breaded. Place your rolls in the prepared baking sheet.

When you are finished with the rolls, spray with cooking spray and place in oven for 40-45 minutes.

Let the chicken cool slightly, then remove the toothpicks, if using. When it has rested approximately 5-7 minutes slice your chicken and serve with salad or rice and enjoy!
