Buffalo Chicken Lettuce Wraps

Wraps should never be boring and this bold, spicy, Buffalo chicken is proof of that! The spice, the blue cheese, the dressing, the green onions are just perfect!

Ingredients

2 cups rotisserie chicken, shredded or blenched tender chicken shredded

1 cup buffalo sauce

½ cup celery, diced

¼ cup red onion, diced

salt, to taste

pepper, to taste

2 leaves green leaf lettuce

2 oz blue cheese, crumbled, for garnish, optional

green onion, sliced, for garnish, optional

Greek Yogurt Ranch Dressing

¼ cup greek yogurt

½ teaspoon dried parsley

⅛ teaspoon garlic powder

½ teaspoon dried dill

⅛ teaspoon onion powder

salt, to taste

pepper, to taste

½ teaspoon lemon juice

Directions

If you are not using rotisserie chicken you can blenched your own. In a pot with water, over medium high heat, squeeze 1-2 lemons, add salt and pepper and your chicken. Bring to a rapid boil and then lower the heat. Let it simmer for 20-25 minutes. When cool to handle, shred your chicken.

In a medium bowl, add the chicken and buffalo sauce. Stir to combine.

Add the celery, red onion, salt, and pepper. Stir to combine and set aside.

Make the Greek yogurt ranch dressing: in a small bowl, add the Greek yogurt, dried parsley, garlic powder, dried dill, onion powder, salt, pepper, and lemon juice. Stir to combine.

Lay each lettuce leaf flat on a plate and scoop the chicken mixture into the middle. Top with a spoonful of Greek yogurt ranch dressing. Garnish with blue cheese crumbles and sliced green onion, if desired & enjoy!
