When you have several people at home, some don’t enjoy certain ingredients and you have those that will eat it all! Crunchy tuna lettuce wrap to my rescue.
5 oz tuna, 2 cans, drained
1/2 large avocado, diced
1 cup carrot, finely chopped
1 ribs celery, finely chopped
1 Tbs of mayonnaise
¼ cup red onion, finely chopped
¼ cup dijon mustard
1 tablespoon lemon juice
½ teaspoon garlic powder
2 Tbs of green onions finely sliced
salt, to taste
pepper, to taste
4 leaves green leaf lettuce
1 cup cherry tomatoes, halved
In a large bowl, add the tuna, the carrots, red onion, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Stir to combine. Divide the mixture in two.
To one of the two, add the avocado, green onions and celery, use a fork to smash the avocado and tuna together. Add mayonnaise and mix well.
Lay a lettuce leaf on a plate or meal prep container. Scoop 1/2 of the tuna mixture (whichever you prefer) into the center of the lettuce and spread down the middle. Top with cherry tomatoes. Repeat with the remaining ingredients. When ready to eat wrap your lettuce and enjoy!
