Easy Chicken Enchiladas

These Enchiladas will quench your thirst of any Mexican food craving. Easy to put together, delicious sauce and easy to make shredded chicken. Served with sour cream and tomatoes, you will be delighted!

Ingredients

1 Tbs of olive oil

1 cup prechopped onion

1 cup unsalted chicken stock

1 tablespoon all-purpose flour

1 1/2 tablespoons chili powder

2 teaspoons ground cumin 3/4 teaspoon garlic powder 1/2 teaspoon crushed red pepper

1/4 teaspoon salt

1 (15-ounce) can unsalted tomato sauce

3 cups shredded skinless, boneless chicken breast

1 (15-ounce) can unsalted black beans, rinsed and drained (or drained leftover prepared black beans

12 corn tortillas

Cooking spray

3 ounces 4-cheese Mexican blend cheese

1 cup chopped tomato

1/4 cup chopped fresh cilantro

6 tablespoons sour cream

Avocado for serving (optional)

Directions

Preheat oven to 350 degrees.

I like bleaching my own chicken and use the liquid after as the chicken stock

If doing so, to 4-5 cups of water over high heat, add pepper and a squeezed lime. Adding the lime itself.

Let it come to a rapid boil and add chicken, bringing the heat down and allowing it to boil for 20 minutes. Take the chicken out, shred and keep liquid.

Heat a medium pot over medium heat and add one Tbs of olive oil. Add onions and cook until translucent, 2-3 minutes. Add the cumin, chili, salt, pepper, crushed red pepper and stir letting all ingredients mix.

Add chicken stock, tomato sauce and flour, mixing rapidly to avoid clumps. Once its mixed, let it simmer until the sauce thickens.

Reserve 1 1/2 cups sauce mixture. Add chicken and beans to pan; cook 2 minutes or until chicken is thoroughly heated.

Stack tortillas; wrap stack in damp paper towels and microwave at HIGH for 25 seconds. Spoon about 1/3 cup chicken mixture in center of each tortilla; roll up. Arrange tortillas, seam sides down, in bottom of a glass or ceramic baking dish coated with cooking spray. Top with reserved sauce and cheese. Place in oven for no longer than 5 minutes. When the cheese melts its ready!

Top with tomato and cilantro. Serve with sour cream and enjoy!
