Chofan (Dominican Fried Rice)

One of my favorite things in life is to enjoy a “fusion” The chofan can be an amazing dish that is perfect for those leftovers you have in your fridge. A definitely blank canvas you can make your! Try it!

3 tablespoons of sesame oil, divided

1 pound boneless pork chops of ham. (I had leftovers of cooks ham perfect!)

3 cooked chicken thighs, cubed to bite size

2 large carrots diced

1/2 of red AND green bell peppers diced

1/2 of medium red onion, chopped

1/2 of medium white onion, chopped

8 cups cooked white rice.

3/4 cup of blanched green peas

1/2 cup soy sauce, , or to taste

1/3 cup of sliced green onion

5-6 eggs, lightly beaten

1 Tbs of minced garlic

1 tsp of minced fresh ginger

1/2 tsp of salt, divided

Directions

Brown your pork chops, cook your chicken. Season to taste. Set aside.

Heat 1 Tbs of sesame oil over high heat in a wok, Add the carrots, peppers and onions, cook and stir for 1-2 minutes. Add the garlic, ginger and and cook and stir for another 30 seconds.

Move your veggies to one side of the wok/pan and add beaten eggs and stir until set. Add 1 Tbs of sesame oil. Once the eggs are set, incorporate everything and add the rice, braking it with a wooden spoon.

Add your final Tbs of sesame oil , stir well and add your pork chops and chicken, soy sauce and stir to make sure all your rice and meats are coated. Add 1/2 of your scallions.
