Is not summer but this Citrus Salad will have you feeling in the tropics! Fresh, delicious and an amazing complement to any protein! Try it!
1 medium navel oranges
1 blood orange
1 small ruby red grapefruit
1/4 cup extra-virgin olive oil 2 tablespoons sherry vinegar or red wine vinegar 1 tablespoon honey
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 (5-oz.) head radicchio
1 small fennel bulb, thinly sliced, fronds reserved
Cut the bulb of the fennel, cut in half and slice thinly. Keep to spread them on top of radicchio leaves. Reserve the leaves of the fronds.
Peel orange, grapefruit & blood orange and cut crosswise into 1/4-inch-thick slices.
Whisk together, oil, vinegar, honey, salt, and pepper in a small bowl. Set aside.
Cut radicchio heads in half lengthwise. Remove core from radicchio heads, and gently break into separate leaves.
Arrange orange slices, and grapefruit slices on top of the radicchio and fennel on a large platter. Drizzle with dressing, and sprinkle with torn frond leaves. Enjoy with favorite protein.
