Parsley Oil

If you have too much parsley at home, want to add a punch of flavor, a swirl of creaminess or just and appetizing drizzle, add parsley oil to your dish. Simple and easy to make.

1 bunch parsley chopped

2 cloves garlic finely chopped

juice of half a lime

3 oz olive oil

2-3 drops sriracha

black pepper

It’s best to make the parsley oil by chopping the ingredients roughly. Doesn’t have to be really fine as the blender will do the work.

Place the parsley, garlic, lime juice, tabasco and some of the olive oil in a Blender until it resembles a paste. Add more oil until it has the right consistency.

If you want you can use a sieve to make a bright clear oil or you can use it as is. Taste and add salt and pepper to taste.

I find the flavors develop if you leave it to stand for a while. One or two hours is usually enough

I usually add it to a drizzle bottle and when you need it, its there. Keep for up-to two weeks in the fridge
