This delicious four bean salad is the perfect complement to any choice of protein. You will be satisfied and definitely enjoy!
For the salad:
15 oz. canned kidney beans, rinsed and drained
15 oz. cooked black beans, rinsed and drained
15 oz. cooked cannellini
beans, rinsed and drained
15 oz garbanzo beans, rinsed and drained
1-2 celery stalks, finely chopped
½ medium red onion
1 small bunch of parsley
For the dressing:
3 tbsp. olive oil
1/4 cup of granulated sugar
1/3 cup apple cider vinegar or lemon juice
1 ½ tsp. salt
In a large bowl, mix all four beans, celery, onion and parsley
Make the dressing by adding all the dressing ingredients in a mason jar or bowl and shake well until all ingredients are incorporated well.
Drizzled the dressing over salad and mix well. Fold to make sure your beans do not get mashed. Enjoy!!
