When you are running around and lunch time is just a short time, you don’t want to spend half of that time ordering and waiting for lunch.
These delicious bowls are easy to assemble, delicious and a convenient way to “enjoy” your lunch time! Try it!
2 cups of cooked brown rice
1 lb lean ground turkey (beef or chicken may be swapped)
2 tablespoons taco seasoning
2/3 cup water
3 roma tomatoes, seeded, and diced tomatoes
1 jalapeno (finely chopped)
1/4 cup red onion (finely chopped)
1/2 lime (juiced)
1/8 teaspoon salt
3 Tbs of finely chopped cilantro
12 oz can corn kernels, drained
1/2 cup shredded cheddar cheese
1 lemon or lime for serving. Sliced into wedges
Brown the turkey in a medium pan and cook over medium heat, breaking it up with a spatula until no longer pink (approximately 10 minutes).
Sprinkle the taco seasoning over the cooked meat, adding 3 Tbs of water, Stir and simmer for a couple of minutes, until sauce has thickened.
Remove from heat and allow to cool slightly before portioning out.
Combine diced tomatoes, jalapeños, onions, lime juice, salt and cilantro. Set aside.
To assemble bowls, divide ingredients evenly between at least four 2-cup capacity meal prep containers.
