
Ingredients:
1-2 Platanos (green plantains)
1 large or two small avocados
1/2 white onion, finely chopped
2 Tbs of Cilantro chopped
Roman tomato sliced
Lettuce leaves (I like Romaine)
Turkey Slices
The juice of 1 lime or lemon
1/2 tsp salt
Two cups of corn or vegetable oil for frying

Directions
Peel plantain and cut each into four.
Set a deep pan with oil over medium high heat. When hot, ease your plantain pieces in. Fry until golden and take out to rest 3-5 minutes on a plate lined with tissue/napkins.

Using plastic wrap, flatten each piece gently. Once finished all pieces, ease them back to hot oil for about 30 seconds on each side. Rest them on napkin again.

Peel your avocado and smash with fork. Add onion and lime juice. Season with salt and add cilantro. Stir well and set aside.

Using a flat surface, place about 1 Tbs of avocado mixture on top of half of your plantain pieces. Follow by lettuce, tomato, turkey and another dab of avocado mixture.

Top each with another piece of plantain and serve! Enjoy!
