2 tbsp unsalted butter
3 cloves Garlic (minced)
1 tbsp of Mrs Dash Table Blend seasoning
1/2 white onion diced
1/2 of green bell pepper diced
2 orange or yellow sweet peppers sliced
1 15oz can of white beans rinsed & drained
1 bunch or 2-3 cups Asparagus (without woody ends; cut into 1/2-inch pieces)
32 oz unsalted Chicken broth (or vegetable broth for vegetarian option)
1 tsp Black pepper
In a heavy bottom pot or Instant Pot over medium heat, melt the butter. Add the onions and sauté until translucent. Add the garlic and peppers and saute for 1-2 minutes, until fragrant. Add the asparagus and saute for about 3 minutes, until it turns bright green.
Lastly add the beans the chicken broth, seasoning, and bring to a boil over high heat. Reduce heat to low and simmer for about 20 minutes, or 11 minutes in the Instant Pot. You want your peppers and asparagus very soft.
Pour soup into a blender and blend until smooth. Transfer soup back to the pot and keep warm until serving time.
Optional: you can add diced chicken or beef for added protein.
