1 lb Chicken breast diced into bite size pieces
12 oz Broccoli florets
1/4 of colored peppers diced (red, green, yellow)
2 carrots peeled and sliced
2 cloves Garlic
1/2 yellow or white vidalia onion diced
2 tsp grated or minced Ginger
2 Tbs of coconut amino liquid
1 cup of water + 1/4 cup
2 tsp corn starch
2 tsp sesame oil
2 Tbs of rice vinegar
1 Tbs of sesame seeds
1 Tbs of Mrs Dash table blend seasoning (divided 1/2 & 1/2)
In a non stick skillet over medium high heat sprayed with cooking spray, add chicken with 1/2 the Mrs Dash seasoning. Cook until chicken is done and begin to caramelized. Set aside
In the same skillet, add onions, ginger and garlic. Stir until onion is translucent. Be careful not to burn the garlic, keep stirring.
Add your peppers, carrots, broccoli, and stir well and add the remaining seasoning. Add 1/4 water and cover to help your vegetables get tender.
While the vegetables cook, in a small bowl, mix the water, amino liquid, sesame oil, vinegar & corn starch. Mix well. Set aside
Return the chicken to the pan with vegetables and sauce. Mix, stir and cover for five minutes. Serve after sprinkling the sesame seeds over it and enjoy.
