Philly Cheese Steak Stuffed Bell Peppers

Low Carb? Taste? Looks? You name it it has it!


2 bell peppers (you choose the colors)

1/2 Tbs coconut oil

1/2 yellow or white onion cut into half in strips

8-12oz of lean flank steak cut in strips

1-2 garlic cloves pressed or minced

1/2 tsp of paprika

1/2 tsp chili powder

1/2 tsp dried oregano

4 thin slices of provolone cheese


Preheat the oven to 350 degrees F

Place peppers, thats been seeded, sliced lengthwise, skin down on a baking sheet that has been sprayed with cooking oil. Bake them from 5-10 minutes or until soften.

In a large non stick skillet over medium high heat warm up the coconut oil. Sauté onions until golden brown

Add the steak, garlic, paprika, chili powder and oregano. Stir fry.

Gently remove the peppers from oven and carefully line each with a slice of provolone cheese. Scoop the beef into each pepper and top with another slice of cheese

Return to oven for about 5 minutes to melt the cheese. Serve and enjoy!!
