
Ingredients
1/8 cup low sodium soy sauce
1 tsp rice vinager
1/2 Tbs of brown sugar
1 tsp grated ginger
1 garlic clove, minced or pressed
1-2 chopped scallions
1 pound of salmon fillets
1/2 bunch of Asparagus
1/4 of each red, yellow, green and orange peppers
1 Tsp of olive oil (can use cooking spray)
Salt
Black pepper

Directions
In a sealable bag combine soy sauce, vinegar, brown sugar, ginger, garlic, and scallions

Add salmon and mix to coat. Chill for 15 to 30 minutes

Dice peppers, wash Asparagus. Place in baking/cooking sheet after sprayed with cooking spray. sprinkle salt and pepper and drizzle olive oil/spray with cooking spray.

Bake for 10-12 minutes. Until the salmon looks cooked and peppers star to brown. Preheat oven to 350 degrees F. Remove salmon from the bag reserving the marinade.

While the oven is on, add the marinade to a small pot and reduce it, 5-7 minutes

Plate salmon with asparagus and peppers. Cover the salmon with marinade. Enjoy!!
