Making a creamy, delicious, healthy soup is always rewarding and brings you comfort. This one does not require over night soaking. Full of vitamin K from the kale and iron from those lentils, among other great benefits.
3 cups of water
2 cups of brown or green lentils
3 plum tomatoes cut into pieces
2 cups of chopped Kale
3 garlic cloves minced
2 chicken or vegetable bouillon cubes
1 tsp of curry powder
1 tsp of ground tumeric
1 Tbs of olive oil
Juice of 1 lemon
In an instant pot sauté with warm olive oil (can sub for cooking spray) the tomatoes and kale.
Add all other ingredients except lemon and water.
Add water stir well and cover and cook for 11 minutes.
After time is up, uncover, stir well.
If you choose to blend like I did, blend using an immersion blender and drizzle lemon juice while serving! Enjoy!
