Call me a skeptic, but I never knew that it was possible to have a burger that was: meatless, healthier, full of flavor! To me it was a myth.
Boy was I wrong. As I strolled in the supermarket, I saw “Impossible”burger patties and it caught my eye. 🧐
Well, I set out to prepare it and this amazingness happened! On most days my husband avoid carbs, what I am not willing to give up is taste…so I decided to go the “lettuce” wrap way. No lettuce in the fridge but there is collard greens. Lets go!
2 Impossible Burger patties
2 big healthy leaves of Collard Greens
1 Tsp of black pepper
2 tsp of Mrs Dash table blend seasoning
2 Tbs of ketchup
4-6 onion rings (no batter 🤪)
Julienned colored bell peppers
2 slices of Swiss cheese
In a heavy deep pot, start by bringing to roaring boil 5-6 L of water. Rinse collard green and holding them at all times deep in boiling water for 30 seconds. Lift and lower again for another 30 seconds.
You will notice it gets pretty deep green in color. Set them aside in a cutting board. When cool, use a sharp knife to cut the stem out making a triangle incision.
Using a flat iron or non stick skillet sprayed with cooking oil. Start cooking your patties. Season with salt, pepper and mrs dash. Cook for 3-5 min on each side.
Place in a corner of your collard green. Top with one slice of cheese. Place your onions in the diagonal space, ketchup and peppers. You can add mustard if you like.
Fold your peppers side to top your onions and then fold again to ketchup. Finally end on burger. Enjoy!!
