I discovered quinoa a couple of years back. I often wonder what took me so long.
Quinoa can replace rices and high on carbs side dishes. Its amazing as dinner and hold perfect in the fridge when doing meal preps. Its also a blank canvas. You can add spices, zets, vegetables and it will be amazing
Now, the key is, how to get fluffy quinoa every time you cook it. Not to dry or too mushy! Here is a method that has worked for me.
2 cups of quinoa (regular, black, tri color is actually my favorite)
1.5 cups of water
1 Tbs of unsweetened butter
1 Tbs of table blend Mrs Dash seasoning
In a deep non stick pot melt the butter over medium high heat. Add the seasoning to pot and stir.
Add the quinoa to the pot and stir well. You will notice the quinoa get a different color. Its picking up all the yummy seasoning & butter.
After about 2 minutes, stirring all the time, add water. It will be covered yet visible.
Cover the pot, lower the heat very low and let the water evaporate. it should take about 5 minutes.
Fluff with a fork to make sure its dry. Cover again and let it cook for about 20 minutes. At the end of 20 minutes, you will notice white little rings around the grains. Its done! Enjoy
