Cauliflower Rice

Want an alternative to rice? Watching your carbs intake. Cauliflower is one way to do that.


2 cups of riced (shredded) Cauliflower

2 Tbs of butter

3 garlic cloves (pressed or minced)

Juice of 1/2 lemon

1-2 Tbs of chopped parsley

2 tsp of Mrs Dash Table-blend seasoning


Melt butter in a non stick skillet over medium high heat. Add rice and sauté for 60 seconds.

Add garlic and mix well. Add parsley, lemon juice and seasoning. Mix well but do not over cook. The rice should be over the heat for no more than 3-4 minutes. Remove from heat and serve!
