Raspberry Coconut Overnight Oats

Yes! Yet another delicious way to prepare your oatmeal overnight jars, to have ready for the busy mornings.

The coconut and raspberries in this one give it a flare of tropical flavor that you will think you are in the Caribean.


1/2 cup Oats

1 1/2 teaspoon lemon juice

1/2 cup unsweetened almond milk

1/2 teaspoon vanilla extract

1 teaspoon chia seeds

1/2 cup raspberries

1/8 cup unsweetened shredded coconut

1/3 cup bananas, sliced (optional)


Add Quaker Oats to your container of choice.

Pour milk, lemon juice and vanilla extract in a different container that you can quickly cover and shake. This will avoid the milk from curdling. Add the milk to oats.

Add chia seeds. Raspberry and coconut last. Cover, refrigerate. In the morning add banana slices if using. Enjoy!!
