
Ingredients
2 cups of chopped kale
1 Cup of shredded chicken breast
1 medium grapefruit, scored and sliced
1 Tbs of capers
1 lemon (1/2 juiced and 1/2 sliced to serve)
1 1/2 tsp of salt
1/4 tsp of black pepper
1 1/2 Tbs of olive oil, divided
Directions:
In a deep dish or bowl, wash kale. Sprinkle salt, 1 Tbs of olive oil and massage kale with both hands.

Top with chicken, add grapefruit, capers. Drizzle with remaining salt and olive oil. Add the lemon juice and serve. Enjoy!
