Im used to doing the delicious overnight oatmeal jars. Now Quinoa is also a possibility.
Whats the difference? Well, there’s a couple of differences but remember that we are not entirely looking to replace oatmeal as is an amazing source of energy and fiber (to name just two) but more looking for different options to keep our breakfast’s tastebuds interested.
Quinoa does have less calories per serving and carbs. It also packs more fiber and protein than oatmeal. So grab a jar and lets have fun!
1/3 cup quinoa flakes
2 tablespoons chia seeds
1 tablespoon honey
1/2 teaspoon ground cinnamon
1/4 cup of greek yogurt
1/4 teaspoon ground nutmeg
1 cup almond milk + more if needed
1 small apple chopped
1 tablespoon almond butter
In a wide mouth mason jar, add the quinoa, seeds, protein yogurt and spices. Top with almond milk and stir (or shake) to combine. Place in the fridge overnight.
When ready to serve, remove from fridge, stir in a bit more almond milk and the 1/4 tsp of vanilla. Top with apples and almond butter. (Optional…a little shake of cinnamon power). Enjoy!!
