Zucchini-Hummus Chicken Wrap-Homemade Spinach Tortilla


1 cup shredded boneless, skinless chicken breast (I like poaching mine. You can use rotisserie chicken)

1/2 medium zucchini, sliced into ribbons

1/2 cup plain hummus

4 homemade spinach tortilla

1/4 cup sliced roasted red pepper


Slice ends from zucchini, and cut lengthwise into thin ribbons using vegetable peeler or mandolin.

Spread 2 tablespoons hummus on each tortilla. Place some chicken on the tortillas. Top with red peppers and zucchini ribbons. Roll or fold and enjoy!
