1 cup all-purpose flour
3/4 cup whole wheat flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 large eggs, lightly beaten
1 cup almond milk
2 medium red apple, peeled and grated
1/3 cup unsweetened applesauce
1/2 cup nonfat plain Greek yogurt
2 teaspoons powdered sugar
Garnish: pinch ground cinnamon
Stir together flours, sugar, baking powder, cinnamon, and salt in a large bowl.
Combine eggs, milk, apple, and applesauce in a small bowl, stirring until well blended.
Add the liquid mixture to the dry mixture and stir until just combined. Let rest 10 minutes.
Spray your Dash waffle iron (if you don’t have a mini one….no problem go big!!. Same great flavor) with cooking spray and spoon 1/4 cup batter into center, spreading batter to the edges.
Cook 4 to 5 minutes or until the steaming stops and waffles are golden brown.
Sprinkle evenly with powdered sugar and ground cinnamon. Serve immediately.
