Roasted “Rainbow” Cauliflower


I have to be completely honest. If there is one thing that makes me happy in the kitchen is colors. Colors from fruit, colors of vegetables colors all around.

Yes, by now we know the more colors you eat the better it is for your health. The amount of nutrients, vitamins and minerals are immeasurable.

Now the thing is, that I am also a firm believer that before a person tastes a bite from a plate, they eat with their eyes. I for one will order something from a menu that has an amazing picture next to it, faster than an amazing menu item that does not. Its all about the optics for me. I refuse to serve a plate if it doesn’t look appealing. Being colorful and naturally is just a cherry on top.

To roast these beautiful Cauliflowers and have the family genuinely enjoy it is priceless for me, AND they look amazing! Definitely a must try!


Head of orange cauliflower

Head of purple cauliflower

Half head of broccoli (can be and preferably substituted with a green cauliflower)

1 Tbs of salt

1/2 Tbs of Black pepper

1/2 Tbs of paprika

Drizzle of apple cider vinegar

Cooking spray


Preheat your oven to 350 degrees F

Cut up your cauliflowers and broccoli in florets and arrange them in a cookie sheet

Mix your salt, pepper and paprika and sprinkle all over. Spray with cooking spray.

Bake/roast your veggies for 30 minutes, stirring them around after the first 15 minutes.

Serve on a platter or bowl and drizzle with apple cider vinegar while they still hot. You can serve as a side or as part of a bigger salad. Enjoy!
