This variation of cauliflower is far higher in antioxidants than the traditional white cauliflower. The reason for its amber hue is due to exposure from the sun. This additional exposure leads to producing more phytonutrients, which protect your body against viruses, fungi and infections. Hmm… maybe a few more colors of cauliflower and we could make a super salad!
