Spinach & Tomato Frittata


3 large eggs

1/8 cup skim milk

1/4 teaspoon salt

1/4 teaspoon coarsely ground black pepper, divided

1 tsp olive oil

1/2 small red onion, halved and thinly sliced

2 cups of spinach leaves

6 cherry tomatoes, halved

1/4 cup shredded part-skim mozzarella cheese, divided

Cooking spray


Pre heat ove to 350 degrees F

Whisk together eggs, milk, salt, and half of the pepper. Set aside.

Heat oil in a nonstick skillet and spray a 9 in cake pan with cooking spray. To the skillet, and add onions. Cook stirring often, until tender. Stir in spinach; and cook, tossing occasionally with tongs, 2 minutes or until wilted.

Pour egg mixture over spinach mixture. Sprinkle top with tomatoes and half of the cheese. Place in oven and cook for no more than 10 minutes.

Take out and sprinkle with the remainder of pepper and cheese.

Cut into 4 wedges. Serve immediately.
