This potato salad is egg free. For some odd reason, my mami used to leave them out. Truth be told, when I had it with eggs, it was out of the norm. Now lets be clear there is two other ingredients that will make your pallet happy
6-8 russet potatoes
1/2 Tbs salt for boiling
1 red apple
1/4 of white onion
2 Tbs of apple cider vinegar
1/2 tsp of salt
2 Tbs of olive oil
1/2 cup of light mayo
In a medium pot. Add water to the potatoes and carrots. Add the 1/2 Tbs of salt. (Cut each potato in two) when they become fork tender, turn off the heat, drain and let them cool.
Once they are cooled to the touch peel and dice the potatoes and carrots.
In a large bowl place the potatoes, a peeled and diced apple, and the onion which you will grate right on top. Add the vinegar, olive oil and salt. Add the 1/2 cup of mayo and mix away. Do it carefully, you dont want mash potatoes but you do want all pieces to get some love
Serve or let it chil for an hour in fridge.
