
If you are watching what you eat or just want to substitute some of the carbohydrates you eat, Zoodles might be a way to go. Zoodles are zucchini in the shape of noodles, Zucchini noodles. Your favorite vegetables, whether carrots, broccoli stems, even beets with the help of a spiralizer can become noodles.
Zucchini are light, crisp in taste and it hardly needs time on the heat/stove. With simple quick ingredients we can turn an otherwise simple vegetable into a yummy appetizer.
Ingredients:
1-2 Zucchini that are firm
About 13oz of turkey sausage (I used Turkey Hill) of your taste
1 minced garlic clove
2 Tbs of diced white onion
1.5 Tbs of olive oil
1/2 Tsp of salt
1/4 tsp of black pepper
2 Tbs of water
Cooking spray
Directions
Spirilize your zucchinis after washing them. Set aside.

Spray generously a nonstick skillet with cooking spray. Add the sliced sausages and stir them well. Let them brown for about 5-7 minutes stirring constantly. Remove from pan and set aside
Add more cooking spray to pan and sauté the garlic. Do not burn it.
Add a good amount of your zucchini noodles and add salt & pepper.

Return your sausage to the pan. After 30 seconds stirring remove from heat and serve. You can serve as a side dish, appetizer or light dinner. Enjoy!
