
This is one of those dishes that are a constant in my home. We might have it for breakfast, lunch or dinner!
The 3 hits consist of salami (Dominican Salami), Eggs, and frying cheese.
The deal makers of this dish is the pickled onions that go on top. Once you have it, you are sure to repeat it.
Ingredients
Pickled Onions
1/2 red onion sliced
1 tsp of salt
1/4 cup of apple cider vinegar
1/4 cup of corn oil
The 3 hits
Salami about 5-6 slices (Induveca or Higueral)
2-3 slices of frying cheese (Quezo Tropical)
2 eggs
1/2 cup of corn oil for frying
Mangú
3 large green plantains
1 minced garlic clove
6 cups of water
2 Tbs of I cant believe its not butter
2 Tbs of Salt

Directions
For the onions:
In a small bowl, mix the onions salt and vinegar. Let it sit for at least 10 minutes.

In a non stick skillet with the 1/4 cup of oil, pour the onion mixture. Only after pouring it you turn on the heat to to medium low. Stir, so the vinegar and oil to mix. When it starts to get bubbly turn off the heat. Pour it back to your small bowl.

For the 3 hits
In the same pan you used heat the 1/2 cup of oil. Start with frying your cheese

Move on to your salami. Set aside.
Lastly, fry your eggs. You might want to change your oil but its not entirely necessary. Set aside

For the mangú
Peel and cut 3 large green plantains. In a deep pot with a heavy bottom have 6 cups of water and salt come to a boil.
Add plantains and let boil until very tender. Fork needs to be easily inserted and removed in a test for ideal tenderness.

When done, smash with a potato smasher or mason jar adding butter, garlic, gradually and until very smooth.

Serve on a plate and top with pickled onions, cheese, salami and egg.
