Mami’s Macaroni Salad


16oz of elbow pasta

Red, Orange, Green & Yellow bell peppers diced small

2 roman tomatoes diced

1 small red onion diced

1 cup of light mayo

1/8 cup of apple cider vinager

4 Tbs of olive oil

2 tsp salt

1tsp of black pepper

1/2 lb of low sodium deli ham, diced


Make sure all your peppers, tomatoes, onion are diced small

Boil and cook elbow pasta according to instructions on box. Make sure you don’t over cooked it

In a 9×13 pan, mix your drained pasta, peppers, onions, ham and tomatoes.

Mix throughly yet gently.

Sprinkle it with the salt, pepper

Drizzle the olive oil and vinager


Lastly include the mayo in the mix and make sure you mix well. Taste and add salt as needed.

Enjoy! This salad is great for gatherings.
