Yellow Plantain Balls-Bacon & Chesse


5 strips of cooked bacon

1 ripe yellow plantain

3 cups of water for boiling

2 Tbs of parsley, chopped small

1/4 tsp Black pepper

1/2 tsp salt

3 oz of cheddar cheese cubed

3 Tbs of flour

1 beaten egg

3 Tbs of breadcrumbs

1 cup of oil for frying


Boil the plantains in water for about 7 minutes after it starts boiling. Drain and let them rest.

Mash the plantains and add the crumbled bacon, parsley, salt and peppers.

With your hands form a ball and placed cubed cheddar cheese in the middle. Make sure the cheese is enclosed.

Roll the ball in the flour, then the egg and finally the breadcrumbs. Set them in a plate

In a non stick skillet, let the oil get hot over medium high heat. Once the oil is hot slowly place your prepared balls in. Let them get golden and crispy in all sides. Careful not to burn them, once they start frying you might want to lower the heat.

Enjoy with marinara sauce of your choice.
