Breakfast Toasts – 2 ways!


4 Slices of sliced bread

3 Tsp Olive Oil, divided

3 Cups Chopped kale

2 Cloves Garlic, minced

1/8 Teaspoon Salt

1/8 Teaspoon Pepper

2 Large Eggs beaten

1/2 sliced banana

1 Tbs of almond or Apple butter

1/4 tsp of chia seeds

1 Tbs of cheddar cheese


Toast bread to desires level. Set aside.

Heat 2 teaspoons olive oil in a large skillet over medium heat. Add kale and cook, stirring occasionally, until the kale begins to soften, about 5 minutes. Add the garlic, salt, pepper. Stir and cook 1 additional minute. Remove from heat then cover to keep warm.

In a small skillet, heat the remaining teaspoon olive oil over medium. Pour eggs into skillet and sprinkle with a little extra salt and pepper. Cover skillet, remove from heat, and let stand about 3 minutes.

To serve, place half of the kale on top of the first two toast, then top with folded egg. Sprinkle the cheese

Spread the almond or apple butter on the remaining two toast. Top with slices banana and sprinkle the chia seeds
