Roasted Pumpkin/Squash Seeds

Every time I buy a whole calabaza (Pumpkin Squash) It hurst me to do away with the “insides” of the pumpkins. I always wondered how to roast the pumpkin seeds. Looked online and http://www.kristineskitchenblog.com/roasted-pumpkin-seeds/ and there was a great tutorial. Needless to say there were delicious.

Separate all pulp and seeds from the squash and place in a bowl.

Fill the bowl with cold water. Using your hand and a lot of patience separate as much pulp from the seeds and place them in a small pot

Fill the pot 3/4 full of salted water and boil for 10-15 minutes.

In a cookie sheet lined with parchment paper make a layer with your seeds. I like to sprinkle mine with salt and a dash of paprika. Roast in oven at 350 F for approximately 15 minutes.

Place in a bowl and enjoy or use in an energizing smoothie
