Turkey, Egg & Cheese Egg White Cups

Ingredients

2 cups spinach

1 roma tomato

2 cups egg white ( I used Egg Beaters)

salt, to taste

½ teaspoon pepper

1 cup of diced deli turkey

1 cup of diced deli white cheddar cheese

Directions

Preheat the oven to 350˚F (180˚C).

Lightly grease a muffin tin.

Divide equally the spinach, tomatoes, turkey & cheese across 6 cups.

Beat egg whites and divide among cups

Season with salt and pepper.

Bake for 15 minutes, or until the whites have set
