2 cornish hens (small ones)
2 cups of sofrito
2 cups of diced butternut squash
2 cups of cooked wild rice
Preheat oven at 350 degrees.
In a lined baking sheet roast your butternut squash for approximately 25 minutes. Once they are done mix them with wild rice. Set aside.
Squeeze lemons and limes and marinate the hens for about 45 minutes.
Discard the juices and season the hens with the sofrito. One cup per bird and massage it making sure you pour some in the cavity.
Bake for approximately 1 hour basting with it juices every 20 minutes.
After 40 minutes take out and stuff with wild rice mixture. Return them to the oven
Raise the oven to 400 degrees for the last 10. That will create a crunchy out side and juicy insides
Serve it and garnish as you like!
