Ingredients
4 boneless chicken breast
1/4 cup of honey
4 Tbsp of Balsamic Vinegar
1/2 cup pomegranate arils
1/2 ripe avocado diced
1 cup of ripe diced mango
2 tbsp of fresh mint (chopped)
1 Tbsp of Olive oil
2 Tbsp of fresh lime juice
Salt and pepper to taste
In a small bowl, Mix the half of the honey with the balsamic vinegar. Set aside
Mix the avocado, mango, pomegranate, mint and remaining honey…set aside
Heat oil in a skillet or inside grill. Sprinkle chicken with salt and pepper and grill over medium to high heat for about 4 minutes on each side. Spoon over vinegar and honey mixture over the chicken while cooking before flipping.
Serve chicken with 2-3 tbsp of salsa.
