2 cups of cooked quinoa
1 cup of diced celery
1 cup of diced radishes
1 cup of diced carrots
1/2 cup of red peppers
1 15oz can of white beans or canelli beans, drained and rinsed
1 Tbsp of paprika
3 Tbsp of olive oil
2 Tbsp of rice vinegar
1 Tbsp of Table Blend Mrs Dash Seasoning
2 Tbsp of water
In a large skillet at medium to low heat, sweat out the carrots, celery, radishes with the water for about 5 minutes. Let cool
In a large bowl, mix the quinoa, carrot mixture, beans and red peppers.
Mix and whisk well the paprika, seasoning, olive oil and vinegar. Drizzle over salad and blend well. Cool in the refrigerator for at least 30 minutes before serving.
