3 hard boiled eggs
1 1/2 cups of skinny hummus (recipe below)
1 tsp of paprika
1/2 cup of baby carrots (optional)
Cut eggs lengthwise
With a spoon, gently scoop out the egg yolk from each egg half, discard.
With a piping bag or Ziplock bag (tip cut off) fill each egg half with hummus.
Sprinkle each gently with paprika
Serve with baby carrots or your choice of vegetables.
