Fall of the bone Pork Ribs

Crisp outside and tender inside


For dry rub

1/2 cup brown sugar

1/4 cup paprika (can use smoked paprika)

3 tbsp coarse kosher salt

1 tbsp cracked peppercorns (about medium coarseness)

2 tbsp garlic powder

1 tbsp onion powder

1 1/2 tbsp ground mustard

2 tsp white pepper

1 1/2 tsp ground coriander

1 tsp ground fennel seeds

1/4 tsp cayenne pepper (can use a little more for more spice)

Whole Slab of ribs


Mix all dry rub ingredients.

Preheat oven at 350 degrees

Pat dry the slab of ribs with paper towels. Sprinkle about 3 Tbs of dry rub generously on both sides

Wrap ribs tightly in aluminum foil place in a pan or baking sheet and bake for 2.5 hours. Checking on it at the first hour and second hour.

The last half hour leave the aluminum foil open and allow the ribs to brown and crisp up just enough.

Cut ribs and see how tender.
