1 large eggplant
2 Tbsp of olive oil
1/2 Tbsp of powered garlic
4 oz of fresh mozzarella cheese cut in triangles of about 1/4 in thick
4-5 fresh leaves of basil
Non stick cooking spray
1 plum tomato, cut into 4-5 thick slices
Mix olive oil and garlic until its well mixed. With a pastry brush, brush the top of each of three big eggplant rounds.
In a cookie sheet, sprayed with a little cooking spray, place the rounds and bake for 20 minutes at 350 degrees.
At the end of which, flip and place a tomato slice, a triangle of cheese and lastly a basil leaf. Repeat at your leisure until all ingredients are done.
Place back in the oven for 5 more minutes.
