
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
3 cups of diced watermelon
½ teaspoon salt
½ teaspoon honey
1/4 of red onion, sliced thinly
1/3 cup of feta cheese
1 large English cucumber, chopped
1 cup cherry tomatoes diced

Directions
Whisk oil, vinegar, salt, honey and in a large bowl.

Add cucumber; toss gently. Cover and let marinate for 15 minutes. Fold in tomatoes. Gently fold in watermelon & feta cheese. Serve immediately.
