Baked Crab Cakes with String Beans and Carrots
3 slices white bread (the only time I will be using white bread :/)
1/4 cup chopped green onions
2 Tbsp reduced-fat mayonnaise
1 1/2 Tbsp fresh lemon juice
1 1/2 tsp Dijon mustard
1 1/2 tsp Worcestershire sauce
1/2 tsp black pepper
1/4 teaspoon Sriracha sauce
2 large egg whites, lightly beaten
1 pound lump crabmeat, drained and shell pieces removed
4 lemon wedges
Pre heat oven to 400 degrees.
Prepare a cookie sheet with parchment paper and lightly spray with cooking spray.
Place the bread in a food processor; pulse 10 times or until coarse crumbs
Combine breadcrumbs and next 9 ingredients (through crabmeat) in a large bowl.
Divide mixture into 8 equal portions; shape each into a 1/2-inch-thick patty.
Arrange patties at least two inches apart and bake until golden brown, for 10-15 minutes. Check underside of parties… if it is still pale flip and bake for 5 more minutes. Serve with lemon wedges, blanched string beans and baby carrots.
