2 to 3 cups of Non-dairy milk of your choice (for the base of the liquid)
Honey to taste (I used 2 Tbs
About 8 to 10 oz of fresh spinach (for the green color and additional nutrition)
For the toppings you can use shredded coconut, mango, banana, and diced kiwis
A quarter cup of chia seeds
In a high speed blender, blend the date, milk, and spinach until very smooth.
In a medium bowl, add the liquid to the chia seeds.
Stir well, and continue stirring every few minutes for about 15 minutes. Cover the bowl and refrigerate for at least one hour (or overnight).
Just before serving, stir again, then top with fruit.
