Broccoli Salad with Sweet Vinaigrette.

*The Original recipe featured in the Biggest Loser, calls for raw Broccoli. When I prepared it I was having 4 six year olds over and I decided to Blanch the Broccoli.


3 Tbsp. orange juice
2 Tbsp. fat free plain yogurt
2 tsp. stone ground mustard
1 tsp 100% fruit spread (orange marmalade)
2 cups. chopped broccoli
2 Tbsp red onion



Blanch broccoli for 2-4 minutes and quickly placed in iced water bath. Set aside.


In a plastic storage container or Ziploc plastic bag, whisk or mix together the juice, yogurt, mustard and preserves.


Add the broccoli & onion. Toss to coat. Cover the container with the lid. Refrigerate for at least 1 hour or up to 1 day before serving.
