Throughout the years I have heard many say: “I love latin food”. What does that mean?
As I contemplated what is it that sets aside Latin food, my blender comes to mind.

Whenever I am cooking, there is an ingredient that is ALWAYS included:
Sofrito!! But MY sofrito….you can make YOURS too! 

“Originally” sofrito is/was a blend of aromatic herbs, salted in oil and used as a base.

Sofrito is a combination of aromatic ingredients which have been cut in very small pieces, and slowly sauteed or braised in cooking oil for 15-30 minutes.

MY sofrito is a mixture of veggies, fresh and dry herbs that is blended and it can be added to rices, beans, meats. Bringing flavor, delight and a latin twist to any meal!

You need only one essential tool: your blender!

Ingredients:

Head of garlic, peeled, and roughly chopped.
2 green bell peppers, seeded, and chopped
1 red bell pepper, seeded an chopped
1 bunch of cilantro
1 yellow onion, peeled and chopped
1 red onion, peeled and chopped
3 bullion cubes
2 tablespoons of apple cider vinegar
Fresh oregano
1/2 cup water
1/2 tablespoon salt
1/2 teaspoon black pepper

Directions

Put everything in a blender and blend until smooth. Save in a glass bottle and
refrigerate. Simple as that!

Extra: the reason why I call this MY sofrito, is because its just that….mine.
You can make it YOURS by adding any other ingredients of your choice. Some
examples might be yellow bell peppers, cumin, coriander, parsley, thyme, basil…The choices are endless.
