Simple Chicken Paella

Simple Chicken Paella

2 boneless skinless chicken thighs (about 1/2 pound), cut into chunks
3 links of spicy chicken sausages. Seared, and sliced.
1/4 pound of imitation crab meat
1/3 cup chopped onion
1/3 cup julienned sweet red pepper
1 tablespoon olive oil, divided
2-3 Cups of cooked brown rice
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon minced garlic
1/8 teaspoon salt
1/4 cup chicken broth
3/4 cup frozen peas, thawed


In a large dutch oven or pot , saute the chicken, sausage, onion and red pepper in 2 teaspoons oil until chicken is browned on all sides.

Mix in the rice, turmeric, cumin, garlic and salt, toss lightly. Add broth and reduce heat to medium; cover and simmer for 10-15 minutes or heated through. Stir in peas and crab meat.
